Oat Banana Breakfast Pancakes


Delicious pancakes that can be whizzed up in the blender and ready to enjoy within 15mins! Top with your favourite fruits, spreads or syrups and enjoy!


(Serves 2/4 large pancakes)


– 2 small bananas

– 1 cup oats

-1/2 cup planet organic

-1 Chi coconut milk

-1/2 tsp salt

– 1 teaspoon vanilla

-1 tsp cinnamon

-1/2 tsp baking soda

-Coconut Oil (I used Biona organic’s)

(optional toppings)

berries, coconut, syrup, bananas, nuts, seeds


– measure out all the ingredients apart from the coconut oil and pulse in the nutri-bullet until the batter is smooth.

– in a frying pan heat a teaspoon of coconut oil until melted and covering the base of the pan then pour out a quarter of the batter into the pan and tilt the pan to ensure the batter reaches the edges.

– cook on a medium heat for 2 mins or until the edges of the pancake pull away from the side of the pan, then flip over using a spatular and continue cooking for a further minute on the other side.

– once the pancake is cooked place on a tray in a warm oven to keep hot whilst you repeat the above instruction 3 more times or until the batter has been used up.

-to plate up I usually serve 2 pancakes per person and like to top with bananas, berries, dried fruit and some sort of syrup- for this particular recipe I used clearsping rice  malt.
