Chocolate Ginger Lava Cake


(Makes 2 Lava Cakes)

2 tablespoons softened coconut oil

4 tablespoons Agave

6 tablespoon almond milk

2 tablespoons self raising gluten free flour

1 tablespoon cacao

1/2 inch grated ginger

pinch Salt

2 Tablespoons Mr Organic dark chocolate spread


-In mixing bowl whisk together all the ingredient apart from the Mr Organic dark chocolate spread.

-Pour the batter into lightly greased ramekins up to around the half way line. Place a tablespoon dollop of the chocolate spread in the centre of them & fill the rest of the ramekin with the chocolate batter.

-Place the two ramekins into a pre-heated 180′ oven and bake for 15mins.

-Remove from the oven and allow the cakes to cool slightly.

 -Turn out onto a plate and decorate with a little more grated ginger before cutting into with a fork to reveal the oozing chocolate centre.
