This is a great summer salad recipe to enjoy as a light lunch or have as a tasty side dish at your next summer BBQ.
1 grated head of medium cauliflower
1 cubed apple
1 hand full chopped walnuts
teaspoon garlic powder
2 tablespoons extra virgin olive oil
juice of 1 Lemon
black pepper and salt to taste
-Take the garlic powder, oregano, lemon juice and olive oil and whisk together in the bottom of a large mixing bowl until combined.
-Tip the grated cauliflower, apple and walnuts into the mixing bowl and stir all the ingredients together so it is all evenly coated in the dressing.
-Add salt and pepper to taste and tip into a serving bowl.
