Peanut Butter Coconut Jelly Bars

 The popular toast topping combination in bar form ;substituting the usual refined sugar filled jam or jelly for The Coconut Merchants delightful coconut jam- 100% coconut goodness!


(Makes 12 Bars)

100g Crunchy Peanut Butter

75ml Agave Syrup

200g Gluten free flour

2 Tablespoons Linseeds

75ml Almond Milk

3 Tablespoons Coconut Merchants Coconut Jam

Shredded Coconut (optional)


-In a mixing bowl whisk together the peanut butter, agave syrup and almond milk.

-Add the flour and Linseeds to the bowl and stir until a mouldable dough is formed.

-Paper line a medium sized rectangular or square baking tray and press the majority of the dough into the base spreading evenly to about a 1cm thickness (you will need to keep some of the dough reserved for later)

-Spread a generous layer of coconut Jam on top of the dough.

-Crumble the remaining dough over the top of the jam layer and add some shredded coconut if you wish.

-Bake for 23-25mins.

-Remove from the oven and allow to cool completely before slicing and serving.
