Cashew maple fudge


 Not for the faint hearted these are sooo rich, decadent and delish which means there the perfect sweet to have in the house as we approach Christmas time and people start popping round. These just taste like pure fudgy creamy heaven and no one would guess they are completely vegan and made without any dairy thanks to the cashews. Plus, there are only 3 ingredients-can’t get much simpler than that!


200g cashew nuts (soaked in hot water for at least 30 mins)

60g coconut oil

80ml maple syrup


-Put the drained cashews, maple syrup and melted coconut oil in your food processor.

-Blend until completely smooth and combined. This will take anywhere between 5-10 mins depending on the quality of your food processor. Just ensure you stop every minute and scrape down the sides to ensure all the ingredients are being ground up.

-Place your mixture into a non-stick, removal base cake pan and put in the freezer for 2-3 hours to set.

-Take out the freezer and  cut into desired shape and size, store in the fridge in an air tight  container.
